Mini Broccoli Cheddar Frittatas
Preheat the oven to 375 degrees. Finely chop 1 cup of broccoli florets and steam in the microwave for about 45 seconds, or until tender. Whisk together 3 eggs, 3 tablespoons milk, 1/4 cup shredded cheddar and a pinch of salt and pepper. Add the chopped broccoli. Pour mixture into a greased mini muffin tray and bake for 20 minutes or until lightly golden and cooked through.

Special Meals: Family Fun In The Kitchen
When our kids were little, I had them in the kitchen with me as much as possible. I started something with them called Special Meals. Every week one of our four children would help me:
- Buy the ingredients at the grocery store
- Prepare the meal for our family
It was a wonderful experience! They looked forward to it and so did I.
I had a few childrens cookbooks with brightly colored pictures on hand that they liked to flip through. They frequently picked their main dish from here. Then I would ask them to choose a fruit, vegetable, and dessert.
When preparing the meal, I had them doing age-appropriate tasks helping me measure ingredients, stir, and mix. We had so much fun!
And now all 4 of our kids love cooking and have even prepared delicious meals for our family , including Pad Thai, Korean beef with rice, fried chicken sandwiches, pasta, and more.
I sleep better knowing that my children will be able to survive without me . Plus, I dont have to worry about them starving when they go to college or beyond because I know they can make great meals for themselves.

Peanut Butter And Banana Quesadilla
Ingredients:
- 2 tablespoons of peanut butter
- 1/2 of a banana
- 1/8 teaspoon of cinnamon
Spread the peanut butter over the entire tortilla. Slice the banana and arrange the slices on half of the tortilla. Sprinkle the cinnamon over the bananas and fold the tortilla in half. Slice it into triangles before serving.
Turkey And Avocado Roll

A turkey and avocado roll-up is an easy-to-eat, healthy snack.
Turkey is a good source of protein, which is responsible for building and repairing tissues in your body. Its also very filling, which can help kids feel satisfied between meals .
Avocados are full of heart-healthy fats, along with fiber, folate, pantothenic acid, potassium, several antioxidants, and vitamins C and K .
To make a turkey and avocado roll-up, first peel and slice an avocado. Gently toss the slices in lime juice to prevent browning. Wrap one piece of turkey around each avocado slice.

Combine 1/4 cup chia seeds, 1 cup coconut milk and 2 tablespoons agave syrup and refrigerate overnight. Serve with fresh pineapple chunks. To make this into a healthy toddler snack, skip the pineapple chunks, adding cut up strawberries or blueberries instead. Plus, make sure all the seeds are fully soaked and soft enough to eat.

- For round foods: cut lengthwise into quarters
- For hard fruits and veggies: grate, cut into matchsticks, dice and saute, steam or roast to soften
- Nut butter: spread thinly on toast
- Chop whole nuts into very small pieces and consider softer nuts like cashews/pecans/pistachios vs almonds/peanuts
